Best Chef Knives For Your Kitchen - Review Of Vintage Henckels Chef Knife Vs New Henckels Chef Knife
Every functional kitchen needs good knives. However, most of us settle for substandard knives which generally get the job done. However, for those individuals that want to take their culinary tasks to the next level - it is with good judgment that time be invested on considering which knives they choose in order to get the best chef's knife.
You might be saying to yourself: "I want the best chef's knife... But I don't want to spend a fortune on knives that all cut the same".
There are two things about that statement that are untrue.
1. You don't have to spend a fortune to get a good knife these days. In fact, you can get yourself a vintage chef's knife off of eBay for next to nothing. In fact, if you're inclined to look a bit you can find one for less than 20 dollars. These vintage chef's knives, some of which are old Henckels Solingen branded are old and gray looking. Don't let the patina fool you. These knives were made with very strong steel which is incredible durable and will literally last lifetimes. Yes lifetimes! These knives however, must be cared for differently than modern day knives. I'll discuss that more in a minute.
2. All knives do not cut the same. In fact, knife edges, handles, and design can give a very different look and feel to the user.
In regards to the old vintage Solingen knives vs. modern day stainless steel knives, you can see a clear difference in how the knives look visually. This is due to the composition of the vintage steel. Due to it's high carbon content the steel is harder and maintains an edge well, however it is more prone to rust and graying. In my humble opinion, this gives the blade character. Newer modern Henckels knives are made with techniques that ensure the blade stays sharp yet doesn't rust or gray. These knives are also generally more tolerant to dishwashers however, it is still recommended that they be hand washed and stored in a butchers block.
In all, Solingen vintage knives and modern Twin Cermax Henckels knives are both good choices. One must decide however, if they are intent on caring for the older more sensitive blade or if they will be content with a less maintenance free blade.
Ultimately the decision is yours. Consider price, feel, durability and the investment that a good knife will give you. A good knife will serve you well for years to come if taken care of regardless of age.
